200g butter, 200g sugar, 3 eggs, 250g mixed fruit, 100g plain flour, 100g self-raising flour, ½ tsp nutmeg, ¼ cup milk, ½ tsp vanilla essence or grated orange rind.
Preheat oven to 180°C. Grease and line a 20cm round cake tin. Beat butter and sugar until light and creamy. Gradually beat in well whisked eggs. Add the fruit, then sifted flours and nutmeg. Stir in milk and essence or orange rind. Spoon mixture into greased tin and bake for 1 hour.
